White Tea
White tea is minimally processed - generally only air dried and slightly oxidized. The highest quality are picked before the leaf buds have opened, while still covered with silky white hairs. Of all teas, whites probably have the least amount of caffeine. While teas should be steeped in water well below boiling (to remove) at about 75 (degrees celsius).
 
Green Tea
Green tea is picked and then quickly dried, either pan fried, steamed or fried in an oven. The goodness of the leaf is sealed inside. Because the leaf is so delicate, the tea should be brewed in water at 75 degrees celcius to prevent cooking the leaves and destroying the subtle note of the tea.
 
Oolong Tea
Oolong tea is gently rolled after picking allowing the essential oils to react with the air and slowly oxidize. This process turns the leaf darker with time and produces distinctive fragrances. When the leaf has reached the desired oxidation the leaf is heated, in a process called 'panning' , to stop the oxidization process. It is then rolled to form the tea into it's final shape. The resulting tea can be anywhere between a green and a black, depending on the processing method. Come try our signature tea, the "Beauty of the East".
 
Pu-Er Tea
Pu-Er teas come from the Yunnan province in China and have a strong earthy flavor. Pu-Er has been praised for generations for it's flavor and health benefits. It's process according to an ancient technique(which used to be a state secret) that involves aging the leaves. It is often formed into bricks and is one of the few teas that ages well. Some prized Pu-Erh teas can be 50 years old.
 
Black Tea
Black tea, or red tea as it's known in China, is the result of a complete oxidation of the leaf before being fired. First the leaf is spread out and left to wilt, losing some moisture, stiffness and much of it's weight. Then it's rolled, exposing essential oils to the air and starting the oxidization process. When this is complete the leaf is heated to stop the process, graded for quality and packed. Black teas are full-bodied and are able to withstand the addition of sweeteners and milk. There are many varieties of Black teas.
 
Scented Tea - Flower Scented Tea
Scented tea is mainly from Fujian, Zhejiang, Anhui and Jiangsu province, because these places also produce fresh flowers. Scented tea is named after the flowers used in its production. Some popular varieties include Jasmine tea, Osmanthus tea and Rose tea.

Scented tea is a unique variety of tea, which doesn't belong to any of the four major tea categories. It is made through a “reprocessing” process where ready- made teas from the four major categories are blended with fresh flowers. The tea leaves are left to slowly absorb the scent of the flowers. The flowers are sieved out and the leaves are then dried.

A more recent creative flower tea, which is very attractive and gives an aesthetic sight, is called the blooming flower tea (Dragon Pearl). This tea is hand crafted by tying the green/white tea into a small round ball with a string. Inside this ball, a flower is embedded. When hot water is added to it, it opens up and a flower will emerge.
